Today's Special 4/19-4/25

Sorry this post is a little late, but it's not like there's a million of you waiting on the edge of your seats for this anyway! *UPDATE: Sorry I forgot to post which recipes were new.

Sunday: We had leftover enchiladas. But, you already ate something anyway, right?

Monday: French Dip Sandwiches with Coleslaw (new recipe... made it last night... a little strong for my taste...feel free to choose your own recipe)

Tuesday: Kelly's Chili with Cornbread

Wednesday: Chicken Fried Steak with Mashed Potatoes and Veggies

Thursday: Leftovers

Weekend: Noodles with Spicy Peanut Sauce and Chicken (new recipe, but Corinne said it was good so if it's not you can blame her!)

OH MY GOSH KAREN YOU ARE THE SWEETEST LOVINGEST MOST AFFIRMINGEST PERSON EVER!

You did NOT just incorporate into your week's plan, recipes from multiple commenters, did you??!! ALREADY?

AND I went on recipezaar and looked at the (Asian) Noodles with Spicy Peanut Sauce recipe that connected with that one Frozen meal I loved but that got discontinued... AND I THINK I CAN MAKE IT EASILY! And make enough for a WEEK for the same price a frozen meal costs! And do a BETTER job, more NUTRITIOUS and DELICIOUS, using GOBS of green onions, my favorites! And maybe pea pods and... it looked like fresh cilantro or something in the picture?

Holy cow can cooking be FUN and EASY? Is this some secret Evil Plot of yours to make the world better through FOOD WISDOM?

I think I wanna make this soon and we can compare notes.

All those nice people in your family and that Steph person were so sweet & helpful & generous... I guess it's catching!

Hey... on the Asian noodles, make sure you use all of the oil it suggests (if you don't like that much sesame seed oil, just substitute more vegetable oil)A few times I've just cut back and the sauce isn't as creamy and smooth.

Query about the Asian noodles dish:
Do you or Corinne having any other tips about making it? I AM going to try it this week! :D

My main question is what kind of noodles to use--we have rice noodles, and angel hair. Do you suggest one of those or something else?

I'm not sure if those noodles would work or not... I'm not usually a big fan of angel hair in general and haven't used rice noodles much. I just used linguine... they're my all-purpose noodle of choice!
